I have a confession to make.

I can't do the vegan lifestyle.  Just can't.

We still drink Silk instead of milk, and we definitely make a lot of vegan dishes, but I simply love cheese too much.  And sometimes, you just need an egg for a recipe.  So I guess I can't call myself vegan... more like "lacto-ovo-vegetarian", which is a friggin' mouthful, so I'll just say "meatless".

I'll admit, it's hard.  Sometimes I think to myself, it would be so much easier to just throw some chicken on the grill!  But knowing that I'm eating healthier is more important than ease.

I made falafel the other night.  Omg, Hubby absolutely loved it!  It would have been vegan without the egg, but the egg is really what held the patties together, so I couldn't omit that.  But overall, it was pretty darn healthy and very tasty.  Hubby liked his as a patty covered in ketchup, and I prefered mine in a pita with lettuce.  I think either way, it was a homerun.

Last night, I made black bean tostadas, from the one and only Martha Stewart.  Damn, that woman knows how to cook!  It was all delicious, and it would have been vegan if I had omitted the cheese, but seriously, who has mexican food sans cheese?  I believe it's the law to add some cheddar or monterey jack.

Overall, I think we're eating pretty well.  This semi-vegan thing isn't too bad, and I noticed that when I indulge in something like KFC (had an intense craving for popcorn chicken the other day), it's way saltier and sugary than I remembered.  It almost makes me sick to eat it.  But my taste for chocolate has not changed whatsoever, ha.

I have never been able to go full blown vegan either... I am truly addicted to cheese lol! But as long as your happy with eating healthy that's what truly matters :) I know what you mean about eating the crap food and feeling like crap afterward... I have done that so many times, I think its just cause your body gets used to eating healthy and then you feed it the junk stuff its like wtf? LOL!

Sometimes I think I could go vegetarian, because working with meat always grosses me out. But there's always that one time where I simply MUST have a cheeseburger.

I've never thought of going Vegan though...we go through a lot of cheese in this house :)

I went vegan for one week because a friend challenged me to do so. And that week further convinced me that cheese is a gift from God that should be appreciated and savored!

1) Husband won't eat ANYTHING healthy. I'm the only one who eats sandwiches, because I buy wheat bread ... and he refuses anything other than white. I think he's actually a 5 year old parading as a 28 year old man.

2) I love meat, cheese AND milk too much to adhere to diets. Instead: I cut back on the butter. And salt. But I love both.

3) Good luck? You're a much more disciplined person than I am simply for reason #2.

Yeah, gotta have me some cheese and milk. And eggs. I like to bake too much - I suppose there are other things you can use in baking to replace the eggs? What about butter? I guess my thing is trying to stay away from processed food, as much as we can. However, I still buy things like goldfish and pretzels, and cereal, but try to stay away from frozen foods, overly packaged stuff etc.
